At a water dealer, part of the stock never sits in the depot; it waits in the customer's kitchen. Full carboys go out at every delivery and empties come back; when the count does not add up, the shortfall shows up not on the depot shelf but in the end-of-month accounts. On the same day the driver also collects cash, some of it stays on credit, and how much each person owes is carried in one person's memory.
